Whilst there are tables in this gracefully decorated and surprisingly spacious dining room, the best place to sit is at the long, wave-shaped counter. from here you can watch the action as the fous sushi chefs prepare the omakase menu- they use Niigata rice and two different types of vinegar for the sushi. there are other hot dishes avaliable and many of the ingredients are flown in daily from Japan.
